A baked potato with an Indian twist ! My improvisation of the traditional baked potato .
Steps

Take a large potato . Wash it thoroughly and wipe it .

Apply olive oil on the outer coat of potato . Sprinkle some salt . Make a few pricks with a fork in the potato.

Bake for 10 min at 900 watts

Cut it into 2 equal halves . Allow it to cool . Gently scoop the inner flesh of potato leaving behind some flesh with the skin intact . Keep it aside.

In a pan , heat some oil and add the chopped chilly and then onions . Fry them golden brown . Add the condiments and let the onions bake down .

Mix the scooped out potato with the onion fry . Mash it well .

Now take the potato skin cups and add a little cheese inside . Now stuff the potato skins with the potato-onion mash . Add more cheese as per your choice . Garnish with corriander .

Bake again in the grill mode at 900 watts for 5 min .

Take out and eat hot !
