This recipe is my adaptation of vanilla french toast from the Virginia Department of Rehabilitation Services cookbook, Delicious Recipes Shared. My family loves this and every time my kids have friends stay over, their friends often request a copy of the recipe to take home. The vanilla extract, nutmeg and frosted corn flake cereal are my additions to create more texture and depth to the recipe. I hope you enjoy this and have fun making and sharing it with your family.

Ingredients

4 servings
  • 1 packages(3 oz) Vanilla cook-and-serve pudding mix
  • 1 cupmilk
  • 1egg
  • 1/2 tspcinnamon
  • dashground nutmeg
  • 1/2 tspvanilla extract
  • 1 loaffrench or italian bread, cut in 8 1-inch thick slices (egg based breads work well too, such as challah)
  • 1 stickbutter (or more if needed)
  • 2 cupfrosted corn flakes cereal

    In mixing bowl, whisk the first six ingredients together until well blended.

  2. 2

    In a separate bowl, add the frosted corn flakes cereal.

  3. 3

    Melt butter in large skillet on medium heat setting

  4. 4

    Dip bread in pudding mixture on both sides.

  5. 5

    Place in bowl with frosted corn flakes cereal, lightly pressing the cereal into the bread (do not mash flat); turn bread over and repeat.

  6. 6

    Place bread in skillet and cook 2-4 minutes on each side until golden brown. You need to watch it closely to avoid burning.

  7. 7

    Serving suggestions: sprinkle with powdered sugar, your favorite syrup, whipped cream with fruit. Enjoy!
