Preheat oven to 375

Add garlic and onion to oil and sauté until translucent, 5-7 minutes

Add the spinach, cook until wilted and season with salt and pepper

Whisk together eggs, half & half, then add lemon zest and thyme

Add spinach, feta cheese, Swiss cheese and mix till combined then season with salt & pepper

Pour the mixture carefully into the crust and sprinkle with remaining half of Swiss cheese
