needed an easy fondant recipe and my sister swears by this one.
Steps

grease large microwavable bowl w/ shortening

fill bowl with marshmallows, water and flavor

microwave on high for 60 seconds

if marshmallow not completely melted stir and return to microwave for 30 sec intervals till melted

fill second bowl with 1 pound of powdered sugar and make a well in the center

add melted marshmallows to powdered sugar and mix with paddle attachment

add food coloring and mix

switch to dough hook or kneed mix by hand to incorporate 2nd pound of powdered sugar

let fondant rest in air tight container for a few hours before using

cornstarch will help keep fondant from sticking to your work surface

if fondant statts to get stiff and hard to work with warm in the microwave for a few seconds to soften

make most important pieces a few days in advance to allow time for drying

water will help hold 2 pieces of fondant together but use sparingly
