Creamy Chicken and Wild Rice Soup
I had wanted to make this type of soup for a long time, and once I found this recipe, no other recipe would do. So I hope you enjoy!
Steps
- 1
Cook your chicken in the pot you plan to make your soup in. Allow your chicken to brown and cook, until only a little pink is left in the middle.
- 2
Cook the rice as directed on the box, add some pepper and salt to taste.
- 3
Add the butter and onions, and cook onions until translucent and a little golden. Once you have done this add the flour and create a roux by mixing the flour into the butter and onions. Add the chicken broth once you've mixed the flour and butter. Let this come to a boil for 1 minute
- 4
Once the broth has boiled for 1 minute add the chicken that has been cut, rice, carrots, pecans, and some pepper and salt to taste.
- 5
Allow the mixture to simmer for 5 minutes, then add the half and half. Let it heat back up and enjoy. Goes well with French bread.
