I couldn’t find any good quality buns, so I improvised using portobello mushrooms, which went very well with the venison 🦌🍄

I couldn’t find any good quality buns, so I improvised using portobello mushrooms, which went very well with the venison 🦌🍄
Steps

Clean the potato skins and cut into wedges. Season with jerk seasoning and sesame oil. Cook in the oven for 20mins

Dice the pickled onions. In a bowl mix mince, onions, egg crushed ryvita, herbs and seasoning

Form the patties

In a hot pan place the mushrooms stem side down, cook for 5mins, flip and top with soy sauce and chopped garlic. Once the tops are cooked flip again and baste with soy. Put a lid on the pan and cook for 2-5mins

Remove the mushrooms and cook the patties in the same pan. Tip: you can also BBQ the burgers and mushrooms for a smokier taste 🔥

Slice the mozzarella and tomato. On a mushroom place: a pattie, mozzarella and tomato and cook in the oven until the cheese has melted.

Construct the burger: gerkins, your favourite sauce or chutney and lettuce.

Top with another mushroom and serve with the sweet potato fries
