Ingredients

30 mins
  1. rice
  2. 4 cupcooled cooked jasmine rice
  3. 2 largeeggs
  4. 1 medium2 to 3 green onions chopped
  5. 8 ozpackage of sliced Portobello mushrooms (optional)
  6. 1 tbspof teriyaki sauce
  7. 3to 4 tablespoons as desired of soy sauce
  8. 1/2 stickof butter
  9. 2 tbspvegtable oil
  10. ginger sauce
  11. 1/4 cupwhite or yellow onion chopped
  12. 1 tbspof fresh peeled and minced ginger root. it is important that you use fresh ginger
  13. 1/4 cupsoy sauce
  14. 1 cloveof garlic minced
  15. 1/2 tspsugar
  16. 2 tbsplemon juice
  17. 1/4 tspwhite vinegar

  1. 1

    heat a large skillet or wok on medium heat and add the vegtable oil

  2. 2

    add the eggs and scramble them as you add them in

  3. 3

    in a separate small skillet saute mushrooms with a little oil or butter until they are shrunk in size and soft, about 5 minutes

  4. 4

    once the eggs are almost done add the rice, butter, sauteed mushrooms and the green onions. Cook for about 5 minutes stirring frequently.

  5. 5

    add soy and teriyaki and cook for another minute or so making sure all the rice is coated with the sauce

  6. 6

    for the ginger sauce add all the ingredients in a blender for about 30 seconds out until the sauce is smooth. I would make the sauce first so you can chill it before serving

  7. 7

    add however much of the ginger sauce to each portion of rice being served. do not mix all of the sauce in with all of the rice
