Texas Style Eggs
Just one tortilla, but is better with smaller tortillas
Steps
- 1
Take eggs and 2 tablespoons BBQ sauce and beat in bowl until fully mixed.
- 2
Turn stove on to LOW and butter the pan (preferably medium-sized), and pour beaten eggs and BBQ sauce into pan.
- 3
As eggs are cooking, turn them over and sort of chop them to .5-1in pieces. It may take a while to cook. While eggs are still liquidly, slowly add onions, pepper, and rip up the piece of roast beef into small pieces and toss in.
- 4
Once eggs are almost done, pour another 2 tablespoons of BBQ sauce into eggs and stir. Wait for the brown color to seep into the eggs, then put equally onto tortillas.
- 5
Let eggs cook for about 3-5 minutes on 3 (Between low and medium)
- 6
Wrap the tortillas up, and there you have it! The best Texas-Style Eggs!
