Oyster Omelet

A must-order dish at stir-fry restaurants—my son loves it! It's easy to make at home and goes great with rice.

Steps
- 1
Rinse the oysters. Bring a small amount of water to a boil, add the oysters, and blanch for about 5 seconds. Remove and set aside—this keeps the oysters from shrinking.
- 2
Wash and finely chop the Thai basil.
- 3
Beat the eggs and mix in the salt and white pepper.
- 4
Add the oysters to the egg mixture and stir to combine.
- 5
Finely chop the scallion and add it to the egg mixture. Stir well.
- 6
Heat oil in a pan. Pour in the oyster and egg mixture and cook until set.
- 7
Transfer to a plate and serve.
