Pressure cook cauliflower, potatoes, carrots and peas until cooked fully. When the pressure comes down, mash up well.

Add butter and oil to a pan and heat up. Add onions and fry till they turn translucent, add in ginger -garlic paste. Saute till it gets fragrant. Add capsicums and fry for another 3 -4 minutes.

Further add tomatoes and salt. Cook till tomatoes turn soft and mushy.

Add chilli powder and pav bhaji masala. Mix and saute for another 2 minutes, until the raw smell goes away from the mix.

Now add boiled & mashed veggies, mix well and pour just enough water to bring to the bhaji to a consistency.

Cook for few minutes until the bhaji thickens. Add kasuri methi, and cook until it reaches a desired consistency.

Now slit the pavs horizontally leaving one edge intact. Heat butter on tawa/grill pan. Slit open pavs, Place them in pan & toast it for a min or two, till they turn light brown and crisp on both the sides.

Garnish pav bhaji with onions, butter, lemon juice and serve it hot with toasted pavs and mint-coriander chutney.
