Ingredients

  • 3Boneless skinless chicken breasts
  • 1 cupItalian dressing
  • 1Red bell pepper
  • 1Orange bell pepper
  • 1Yellow bell pepper
  • 1 cupShredded mozzarella cheese
  • 10 slicePepper jack cheese

Steps

  1. 1

    Marinate your chicken breasts in the Italian dressing for at least 2 hours (not required but suggested)

  2. 2

    Season chicken with what you like, I like to use a tomato basil seasoning

  3. 3

    Bake chicken at 375 for 20 minutes

  4. 4

    While chicken is baking, cut and clean the seeds out of the peppers

  5. 5

    After the 20 minutes sprinkle the bread crumbs on top of the chicken and add the peppers around the chicken, bake an additional 10 minutes

  6. 6

    Sprinkle the shredded mozzarella all over everything... Don't be shy

  7. 7

    Lay slices of pepper jack on top, covering all the peppers and the chicken and put it back in the oven an additional 10-20 minutes depending on if you just want the cheese melted or golden. Serve and enjoy
