Ingredients

  1. 4boneless skinless chicken breasts
  2. 1 lbSweet Italian turkey sausage
  3. 1 cupRicotta cheese
  4. 1/2 cupshredded Italian cheese blend
  5. 10 ozfrozen chopped spinach
  6. 1/2 cupIan's gluten free panko bread crumbs
  7. 1large clove crushed garlic
  8. 1/2 cupgrated parmesan cheese

Steps

  1. 1

    Thaw spinach and squeeze out all the liquid and set aside.

  2. 2

    Slice chicken breast halfway through and pound flat.

  3. 3

    In a bowl, combine remaining ingredients and divide into fourths.

  4. 4

    Make a football shape and place into the center of each chicken breast.

  5. 5

    Wrap chicken around the filling and place onto baking sheet.

  6. 6

    Season with salt and pepper to taste and bake at 400°F for 45 minutes.
