  1. 6 cupsChicken Stock
  2. Chopped rotisserie chicken
  3. 1 CanSweet Corn (drained)
  4. 2 CansDiced Tomatoes with Chiles (not drained)
  5. 1 canblack beans (drained and rinsed well)
  6. 1medium Sweet Onion Sliced
  7. 6-8thinly sliced mini sweet peppers
  8. 3 clovesGarlic minced
  9. 2freshly squeezed limes
  10. 1 tspChili Powder
  11. 2 tspGround Cumin
  12. 1 1/2 tspSalt
  13. 1 tspBlack Pepper
  14. Toppings
  15. Monterey Jack cheese
  16. Crispy onions
  17. stripsSalsa verses tortilla
  18. Sliced jalapeños
  19. Cilantro
  20. Avocado
  21. Sour cream

Steps

  1. 1

    Pull chicken meat off and chop into cubes, put in crock pot

  2. 2

    Thinly slice onion and peppers, finely chop garlic add to a pan and sauté with butter/oil until soft and slightly charred then add to crockpot

  3. 3

    Drain and rinse beans well, drain corn, slice in half limes (to squeeze) add all to crock pot

  4. 4

    Add diced Chile tomatoes (do not drain), chicken stock, seasoning and stir completely.

  5. 5

    Slow cook for 6-8 hours on low, or 4 hours high. Serve with your choice of toppings
