  2. 1Red bell pepper
  3. 1Yellow bell pepper
  4. 1Red onion
  5. 2Garlic cloves, minced
  6. 1/3 cupOlive oil
  7. 1 1/2 tspKosher salt
  8. 1/2 tspFreshly ground black pepper
  9. 1/2 lbOrzo
  10. dressing
  11. 2 1/3 cupFreshly squeezed lemons
  12. 1/3 cupOlive oil
  13. 1 tspKosher salt
  14. finish
  15. 4Scallions, minced
  16. 1/4 cupPine nuts
  17. 3/4 lbFeta, 1/2 inch cubes, not crumbled
  18. 15Fresh basil leaves, julienned

    Preheat oven to 450*

    Toss eggplant, bell peppers, onion, and garlic with olive oil, salt, and pepper on a large sheet pan. Roast for 40 minutes, until browned, turning.

    Cook orzo in boiling salted water for 7-9 minutes, until tender. Drain and transfer to a large serving bowl. Add the roasted vegetables to the pasta, scraping all liquid and seasonings from pan into bowl.

    For dressing, combine ingredients and poor into pasta and vegetables. Let cool at room temperature, then add scallions, pine nuts, feta, and basil. Serve at room temperature.
