Stuffed Grape Leaves (Yalanji)

Sauté the onions in oil until they turn golden.

Add the tomato pieces and cook until they soften.

Add the herbs, hot pepper, and spices.

Stir occasionally and cook until the mixture thickens. Add the rice and stir for 2 minutes, then remove from heat.

Arrange potato slices at the bottom of the pot, then start stuffing the grape leaves on the rough side.

After stuffing, drizzle 2 tablespoons of oil on top and place the pot over low heat for 5 minutes before adding the broth.

Pour the broth over the stuffed grape leaves until it just reaches the top layer. Place two plates or weights on top and cover the pot.

Cook over medium heat until it boils, then reduce to low and let it absorb the broth. Remove the weights and let it finish cooking.

Serve with tahini sauce or yogurt.
