Brad's southwest chicken burger

Ingredients

  1. 2 lbsboneless, skinless chicken breast
  2. Onion buns
  3. 1/4 lbbacon. Cut strip in half then fry to preference
  4. For the southwest sauce
  5. 1/2 cupranch dressing
  6. 1 tbsFrank's red hot sauce, buffalo style
  7. 5 dropstobasco sauce
  8. 1 tsponion powder
  9. For the batter
  10. Dry
  11. 1LG can french onions, crumbled
  12. 2cups, garlic herb bread crumbs
  13. 1/2 cuppanko
  14. Wet
  15. 1 cupmayonnaise
  16. 1 tbsmustard
  17. 1 tspwhite pepper
  18. 1/4 cupwhole milk or cream
  19. For garnish
  20. slicesSharp white cheddar
  21. Sliced tomato
  22. Diced green chiles
  23. Red leaf lettuce
  24. If you are daring, Brad's roasted chiles

Cooking Instructions

    Mix the southwest sauce ingredients. Chill in refrigerator until serving.

    Mix wet batter ingredients in a bowl.

  3. 3

    Put french onion in a LG zip lock bag. Crush with a cup until they are fine. Add rest of dry ingredients to the bag and shake well.

    Slice or pound out chicken breasts until they are 1/2 inch thick.

    Heat oil in a large frying pan. About 1/4 inch deep. Medium low.

  6. 6

    Dredge chicken in wet batter. Place dry ingredients on a plate and coat. Press crumbs into chicken to coat evenly.

    Fry until well browned and fully cooked. Meanwhile toast bun. Change out oil every couple patties.

    Spread southwest sauce on both buns. Top with desired ingredients. Serve immediately. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
