Jollof rice and fried chicken

Roughly blend tomatoes, peppers and 1 onion. Set aside

In a separate pot, pour 4 cups of water and bring to boil. Add washed rice and cook for 10 minutes.

In a medium sized pot, pour in 2 cooking spoons of oil and heat up. Chop up half an onion and garlic clove. Gently sautee on medium heat then add blended tomatoes and pepper.

Place washed chickan quarters in a pot, add half of an onion, chopped, stock cubes, salt, thyme and curry. Cook on low heat till tender. When cooked, fry till golden brown.

Sauce should be cooked now with the oil floating to the top. Return rice to heat with a cup of chicken stock on low heat. Add fried sauce, stir and taste for seasoning. Turn up heat to medium and cook for 15 minutes

When rice is cooked, turn down heat and let burn😁

Serve with fried chicken and a chilled drink.
