Wash and cut each of the Plantains into two. In your cooking pot pour your water, add the Plantain. Place on fire. Cook until tender using medium heat. Drain out the water. Allow the Plantains to cool off a bit. Peel off the peels and keep the already cooked plantain in a flask or cooler to prevent it from getting cold.

Wash all your veggies and tomatoes. Chop them separately and keep aside. Chop your onion too and keep aside

In your sauce pan, add the red oil. Heat it for 1 minute. Saute or stir fry your onion. Add the tomatoes. Fry for 3 minutes. Add your salt, cube, ground Pepper. Allow to cook for 1 minute. Add the red bell and green bell peppers. Add the green vegetable. Stir. Cover and allow it to simmer for 2 minutes. Bring down from the fire

Serve with the cooked plantain.
