A very moist cake thanks to the yoghurt. The carob adds a lot of sweetness without adding more sugar

Ingredients

  1. 245 gramsplain flour
  2. 1 cupbrown sugar (or granulated sugar if you prefer)
  3. 1 teaspoonbaking soda
  4. 10-12 tablespoonsunsweetened cocoa powder
  5. 1/2 teaspoonsalt
  6. 5 tablespoonsground carob
  7. 400 gramsfirm yoghurt (not as watery as buttermilk but not as firm as greek yoghurt either)
  8. 300 mlwater
  9. 200 gramsbaking chocolate (for the frosting)
  10. 2 tablespoonsmilk (for the frosting)

Cooking Instructions

    Combine dry ingredients in a bowl (flour, sugar, baking soda, cocoa, salt and carob). Whisk thoroughly

    Combine wet ingredients in a separate bowl (yoghurt and water). Whisk thoroughly

    Slowly add wet ingredients to the dry ingredients. Mix until just combined

    Pour the batter in a round 25 cm cake pan that's been greased and lined with parchment paper. Bake for 25-35 min in a 180°C oven

    Make the frosting: combine chocolate and milk in a bowl. Microwave until melted at 30 second intervals, stirring each time. Let cool a bit then pour over the cake. Refrigerate until firm

It looks very yummy , but I have never heard carob, until today , then I googled it, Can I find it anywhere? ( My kid is craving for chocolate cake last few days ! 🙄 )
