Ingredients

  • 1large shallot
  • 4 teaspoonsolive oil
  • 8 ouncesportabella mushroom
  • 1/2 cupdry white wine
  • 4 cupschicken broth
  • 1 tablespoonfresh basil
  • 1 tablespoonfresh chives
  • 2 tablespoonmascarpone cheese
  • 3 tablespoonsfreshly grated parmesan
  • sea salt
  • black pepper
  • 8 ouncesplum tomatoes, skinned, seeded and finely chopped
  • 10 ouncesarborio rice

Steps

  1. 1

    Saute the shallots with the olive oil for about 3 to 4 minutes.

  2. 2

    Add mushroom and saute until softened.

  3. 3

    Stir in rice and cook for another minute or two. Add wine, stir and cook until absorbed.

  4. 4

    Pour in 1 cup chicken broth, bring to a boil and cook until absorbed, stirring frequently.

  5. 5

    Gradually stir in rest of broth over a period of 15 minutes.

  6. 6

    When rice is al dente, mix in tomatoes and herbs. Check seasoning and stir in cheeses. Top with parmesan.
