  1. 1whole organic chicken
  2. 2 Tbspolive oil
  3. 2 sheetsaluminum foil

    Place oven on high broil.

  2. 2

    In a casserole dish or brownie pan, place one sheet of aluminum foil in the bottom.

  3. 3

    Take the chicken and remove bag of gizzards and wash it thoroghly with lukewarm water.

  4. 4

    Place chicken breast side up in pan.

  5. 5

    Cover chicken with the olive oil using a basting brush.

  6. 6

    Place second piece of aluminum foil over the chicken.

  7. 7

    Put chicken in oven and broil for 1 hour.

  8. 8

    Remove top sheet of aluminum foil and place back in oven for another 25 minutes - depending on your oven.

  9. 9

    Chicken should register 165 degrees F in the breast and at least 175 degrees F in the legs and thighs. Use a meat thermometer to check.

My ancestors claim heritage from Britain, Ireland, and France. I use mostly organic ingredoents and traditional cooking tools and methods. This helps me get into my ancestors' mindset and connects me to their way of life.
