Ingredients

  1. 4 3/4 cupssemolina flour (about 750 grams)
  2. 1 3/4 cupsgranulated sugar (about 350 grams)
  3. 1 cupunsalted butter or ghee, melted (about 250 grams)
  4. 1 cupmilk (about 250 grams)
  5. 1/2 cupglucose syrup (about 100 grams)
  6. 1/2 cupfinely shredded coconut (about 50 grams)
  7. Mixed nuts, for garnish
  8. 3 cupswarm light syrup (about 720 ml), for soaking

Steps

  1. 1

    Heat the milk and butter (or ghee) in a saucepan until just warm.

  2. 2

    Add the glucose syrup, sugar, and coconut to the milk and butter mixture.

  3. 3

    Mix well until the mixture is fully combined.

  4. 4

    Finally, add the semolina flour and gently fold it in. Do not overmix.

  5. 5

    Grease a baking pan with butter and pour in the mixture.

  6. 6

    Garnish with mixed nuts.

  7. 7

    Bake in a preheated oven at medium heat until golden.

  8. 8

    As soon as it comes out of the oven, pour the warm light syrup over the basbousa and serve.
