At my mother's place this probiotic drink was must for all family members to have in the winters. My mother made sure that all elderly members should have it daily after lunch.Because kanji is good for the digestion.
Steps

Clean,scrap and cut carrots into pieces.

Grind mustard seeds. Collect all ingredients at one place.

Boil 1 kg of water.Cool it.

Take a wide mouthed vessel. on a hot griddle burn coal sprinkling ghee and hing powder.Flip the pot mouth over this coal.Leave it like this for 5 min.

Let the smoke fill the pot. Now Keep the pot straight and put carrot juliens, ground mustard seeds,chilli powder,black and white salt, saunf off,turmeric powder.Fill the bottle with water.Cover the mouth of bottle with thin clean clloth.

Keep this bottle in the sun for 3 days.Stir the carrots daily with wooden spatula.

When ready serve after lunch.
