Ingredients

4 servings
  • 1 1/2 cupBasmati long grain rice
  • 2 cupsPineapple chopped in cubes
  • 1 tspcumin seeds
  • 1 tspTurmeric powder
  • 1/2 inchginger garlic paste
  • 2+2 tbsp Ghee
  • 2Black cardamom
  • 4Black pepper corns
  • 2bay leaves
  • 4Cloves
  • 1Onion big chopped
  • 2 tbspMint leaves chopped
  • 8-10 strandsaffron strands and 1/4 cup hot milk
  • 1/4 tspGaram masala powder
  • 10Cashewnuts
  • 20Black currants
  • to tasteSalt
  • 2 tbspCurd
  • 1Spring onion

Steps

  1. 1

    Soak saffron strands in milk.

  2. 2

    Fry cashewnuts and black currants in ghee.

  3. 3

    Boil rice in 6 cups of water.Add cinnamon stick,black 1cardamom,bay leaf..Cook till 3/4 done.Drain water.

  4. 4

    Heat ghee in a heavy bottomed cooker add bay leaves,cumin seeds,cinnamon stick,black pepper and ginger.

  5. 5

    Add onions fry and then add ginger garlic paste and pineapple pieces.Cook till pineapples soften.It takes 7-8 minutes.

  6. 6

    Now add rice. Add curd,mint leaves,chilli powder,garam masala powder and salt.pour saffron milk.

  7. 7

    Mix well.Cose the lid of cooker.

  8. 8

    Let it cook for 15 minutes on slow heat.

  9. 9

    Open the lid when the steam settles down. It will be cooked fully.

  10. 10

    Garnish with cashews,spring onion and black currants.
