First boil water add about 6 to 7 cups soak the rice for 20 minutes after 20 minutes add to boiling water to this add 2 bay leaf 2 cardamom add only the seeds of cardamom and little mint leaves and 1 tsp salt let it cook for 10 minutes or 3/4 cooked.drain and keep this aside

Heat the heavy bottom pan add oil and ghee add cinnamon,cloves cardamom seeds and bay leaf fry for 2 minutes then add slice 1 onion and stir then add ginger garlic paste fry till raw smell evaporate add salt then add tomato stir for 1 minute now add masala that is chilli powder,daniya powder turmeric and garam masala and sugar stir on a low flame now add curd mix then add paneer cubes stir well for 2 minutes before adding rice adjust salt according to ur taste

Now add half boiled basmati rice don't mix on top of that add saffron soak in a milk then add fried onion and fried nuts cover and let b simmer for 5 to 10 minutes if want add more ghee in this stage u can add yummy paneer biriyani is ready serve with raita hope you all will like this dish thank you happy cooking friends.
