Slit the brinjals and keep them soak in salt water

Dry roast the groundnut. Once they change colour add sesame seeds and coconut. Roast till brown. Let it cool

Grind it along with half of onion. Add garlic green chillies chopped and coriander in mix. Grind to fine paste.

Now to this paste. Add turmeric powder and red chilli powder garam masala and salt. Mix well

Stuff this mix into the brinjals.

In a pan heat oil. Add the remaining onions. Fry till golden. Add the stuffed brinjals. Fry for 3 to 4 min

Add tomato a little turmeric powder and red chilli powder keep stirring. Now add water and little salt.

Cover and cook for 35 mins on medium flame.

Garnish with chopped coriander. Serve hot
