Steam the couscous over boiling water until fully cooked.

Mix the couscous with clarified butter, oil, and a little water to keep it from clumping.

Sauté the meat with spices and finely chopped onion, then cook in a pressure cooker until tender.

When the meat is almost done, add the mixed vegetables and chickpeas to cook together.

Serve the couscous as shown in the picture.

Sauté onions with raisins in some of the meat broth and a little clarified butter until golden; this makes a delicious topping.
