Ingredients

  1. 1 bunchsemi-ripe Thai bananas (such as Namwa or burro bananas)
  2. 1 cuprice flour (about 120 grams)
  3. 1/4 cupall-purpose flour (about 30 grams)
  4. 1/2 teaspoonsalt
  5. 1 teaspoonbaking powder
  6. Toasted white sesame seeds (as much as you like)
  7. 1/2 cupshredded fresh coconut (about 40 grams)
  8. 1/2 cuppalm sugar (about 80 grams)
  9. 1/2 cupcoconut cream (about 120 ml)
  10. 1/4 cupclear limewater (about 60 ml; see note)
  11. 3-5pandan leaves
  12. Oil for frying

Steps

    In a mixing bowl, combine the rice flour, all-purpose flour, salt, baking powder, palm sugar, sesame seeds, shredded coconut, clear limewater, and coconut cream. Stir until the flours and sugar are dissolved and the batter is smooth. Peel the bananas and slice them lengthwise into thin pieces—cut each banana into 3 slices (if the bananas are large, cut into 4 slices).

    Pour oil into a pan and heat until hot. Add the pandan leaves and fry briefly to infuse the oil with fragrance (you can cut the pandan leaves into short pieces).

    Dip the banana slices into the batter, then fry until golden brown and crispy. Remove and drain on paper towels.
