Thai Fried Bananas (Kluay Kaek)

In a mixing bowl, combine the rice flour, all-purpose flour, salt, baking powder, palm sugar, sesame seeds, shredded coconut, clear limewater, and coconut cream. Stir until the flours and sugar are dissolved and the batter is smooth. Peel the bananas and slice them lengthwise into thin pieces—cut each banana into 3 slices (if the bananas are large, cut into 4 slices).

Pour oil into a pan and heat until hot. Add the pandan leaves and fry briefly to infuse the oil with fragrance (you can cut the pandan leaves into short pieces).

Dip the banana slices into the batter, then fry until golden brown and crispy. Remove and drain on paper towels.

Serve warm and enjoy!
