Ingredients

4eggs
2fresh tomatoes diced
3fresh pepper diced
1mushroom diced
1bell green bell pepper dice
1/2onions diced
to tastesalt
1/4 cupveg oil
fried plantain

Steps

Break eggs into a bowl and whisk

Heat up frying pan and add oil once it's hot add onions and stir

Add tomatoes, mushroom, bell pepper and pepper and stir continuously for 5mins

Stir in eggs and scramble till eggs is fried through
5

Serve with fried plantain
