Wash and soak the raw rice in water for overnight. Blend it coarsely in a blender adding very little water (if needed). Grind the freshly grated coconut to a smooth paste.

In a pan, melt the jaggery by adding little water and strain it. Keep it aside. In a bowl, add the blended rice, cardamom powder, coconut paste, chopped shallots, and strained jaggery. Mix well to form a thick dough consistency. Keep it aside for 3-4 hours.

Heat oil in a deep bottomed pan. Wet the palms of your hands. Take a small portion of the dough. Press it down slightly with your fingers and make a hole in the middle using one finger. Carefully drop it into the hot oil.

Deep fry the vada until both sides are crispy and light brown in colour. Drain on paper towels. Repeat the process with the rest of the batter. Serve with hot tea or coffee as an evening snack.
