This dish is so simple and quick that it's a common choice to make at home on someone's birthday if it falls during the week, since the big celebration is usually on the following Saturday.

Bring water to a boil in a small pot. Add the baking soda and tomatillos. Cook for 3 minutes, then remove from heat and drain. If you want it spicy, cook serrano or jalapeño peppers with the tomatillos to taste.

Blend the tomatillos with the cilantro leaves, optional peppers, onion, garlic, salt, pepper, or chicken bouillon. Set aside.

Fill the flour tortillas with the shredded chicken to make small rolls. Place them in a baking dish, pour the sauce over them, add the sour cream on top, and cover with shredded or crumbled cheese.

Bake for 30 minutes at 350°F (180°C) or until the cheese is melted and lightly golden.
