Steps

If you hav a pressure cooker, cook lentils until 2 whistles. Open it and let it cool

If you dont have pressure cooker you can omit the above step

In a wide bottom pan, add oil, fry red chilles, garlic and mushrooms til mushrooms are cooked. Add tomato paste and fry for 2 mins

Add quinoa , lentils and veg or chicken stock to the pan and cook for 5 mins.

Add salt , kale and baby spinach leaves and lemon slices and simmer for 5 mins

Close the pan with a lid and turn off the stove and let flavours soak in.

Serve with fried chicken or egg.

Once the quinoa is cooked, if you want soup watery consistency you can add more stock .
