My three kids and husband love spicy black ink squid stir-fry (it's the black ink that makes it delicious)... This is one of our family's favorite dishes. The seasoning is simple, and it doesn't take long to cook... The taste is super yummy and delicious...

Clean the squid carefully so the ink doesn't spill (the black ink is what makes the dish more delicious and savory). Squeeze lime juice over it, let it sit for a moment, then rinse.

Sauté the sliced seasonings, galangal, bay leaf, ginger, and tomato until fragrant and slightly wilted. Then add the squid and green onion, cook while stirring. You can add a little water (just a little because the squid releases water when cooked, or if you don't like it soupy, don't add water). Add the other seasonings and cook until the squid changes color.

Taste the squid to ensure it's cooked and tender, then remove from heat and serve with warm rice. Super delicious and yummy.
