Ingredients

  1. 1.1 lbsfresh squid
  2. Sliced seasonings:
  3. 6shallots
  4. 3 clovesgarlic (chopped)
  5. 1onion
  6. 7red bird's eye chilies
  7. 5large green chilies
  8. 1 stalkgreen onion
  9. 1tomato (I use a small one)
  10. Other seasonings:
  11. 1 piecegalangal
  12. 1 pieceginger
  13. 1bay leaf
  14. 1 pinchsugar (to taste)
  15. Broth powder (to taste)
  16. Ground pepper (to taste)
  17. Flavor enhancer (to taste)
  18. 1lime

Steps

    Clean the squid carefully so the ink doesn't spill (the black ink is what makes the dish more delicious and savory). Squeeze lime juice over it, let it sit for a moment, then rinse.

    Sauté the sliced seasonings, galangal, bay leaf, ginger, and tomato until fragrant and slightly wilted. Then add the squid and green onion, cook while stirring. You can add a little water (just a little because the squid releases water when cooked, or if you don't like it soupy, don't add water). Add the other seasonings and cook until the squid changes color.

    Taste the squid to ensure it's cooked and tender, then remove from heat and serve with warm rice. Super delicious and yummy.
