There are many flavors of jelly to try, but my family loves fruit flavors, especially longan. Its refreshing, unique taste and fragrant aroma are simply irresistible.

There are many flavors of jelly to try, but my family loves fruit flavors, especially longan. Its refreshing, unique taste and fragrant aroma are simply irresistible.

Agar jelly

Mix the sugar and agar powder together in a bowl.

Soak the longan in lightly salted water, rinse well, and drain. Peel and remove the seeds to get the longan flesh and juice.

Cooking method: Pour the coconut water into a pot and bring to a boil. Once boiling, gradually add the agar-sugar mixture while stirring constantly. When the agar is fully dissolved, simmer for a few more minutes on low heat until the jelly is clear and expanded.

Add the longan flesh and stir well, then turn off the heat.

Pour the jelly into small molds and let cool, then refrigerate. (Use small molds, as cutting large molds may break the jelly around the longan and not look as nice.)

Result: The jelly is soft and chewy, filled with the fragrant aroma of longan and the delicate sweetness of coconut water.
