Ingredients

  1. 1 cupgrated fresh coconut
  2. 1/4 cupground nuts
  3. 2 tbspred chilli Powder
  4. 1/2 tbspturmeric Powder
  5. 1 tbspcoriander Powder
  6. 5-6curry leaves
  7. 2-3 tbspoil
  8. 1 tbsptamarind pulp
  9. 1/2 tspaamchoor Powder
  10. leavesCoriander
  11. 7-8medium sized brinjals
  12. 1 tbspginger garlic paste
  13. 1 tbspcummin seeds
  14. 1small onion
  15. to tasteSalt

Steps

  1. 1

    Dry roast groundnuts and remove the cover

  2. 2

    In a jar take coconut, cummin seeds, groundnuts ginger garlic paste and make a fine paste.

    Take brinjal and make 4 cuts.keep it in salt water

  4. 4

    Transfer the grounded masala in the bowl add all the dry masalas and salt to taste

  5. 5

    Fill this masala in brinjal keep aside.

  6. 6

    In a kadai add oil, splutter cummin curry leaves

  7. 7

    Add onion and cook till light golden colour

  8. 8

    Now keep stuffed brinjal cover the lid

  9. 9

    After seconds turn on other side, now add the remaining masala, add little water and cookon medium heat

  10. 10

    Check the consistency and whether the brinjal are cooked or not.

  11. 11

    Finally add coriander leaves and switch off the gas.
