Ingredients

  • 1.5 poundsoxtail
  • 1 teaspoonsalt
  • 8 1/2 cupswater
  • 3/4 inchginger, crushed
  • 1 tablespoonvegetable oil, for sautéing
  • 9 ouncespotatoes
  • 7 ouncescarrots
  • 1tomato
  • 3green onions
  • 2 stalkscelery
  • 1/2 teaspoonsalt, for sautéing
  • 6shallots, minced
  • 2 clovesgarlic, minced
  • 1/2 teaspoonground pepper
  • 1/4 teaspoonground nutmeg

Steps

  1. 1

    Boil the oxtail, then reduce the heat once it reaches a boil.

  2. 2

    Add ginger, 1 teaspoon salt, pepper, and ground nutmeg.

  3. 3

    Cook until the oxtail is tender and the broth is oily.

  4. 4

    Sauté the minced shallots and garlic with 1/2 teaspoon salt in 1 tablespoon vegetable oil, then add to the broth.

  5. 5

    Add carrots and potatoes, once tender, add tomato, green onions, and celery.

  6. 6

    Wait until all ingredients are cooked, let cool, and serve with fried shallots for extra flavor.
