Ingredients

Four 15" pizzas
  1. 4 1/2 cupsunbleached bread flour
  2. 1/4 cupcoarse cornmeal
  3. 1 tablespoonyeast
  4. 1 tablespoonsugar
  5. 2 teaspoonssalt
  6. 2 teaspoonsgranulated garlic
  7. 12 ouncesbottled water
  8. 1/4 cupextra virgin olive oil
  9. 1/4 cupwhole milk

Steps

  1. 1

    Using a stand mixer, pour in wet ingredients at room temperature. And then add the dry with the yeast not touching the salt. Start mixing at speed one.

    Mix at speed 2 to 3 until mixed and you can form a windowpane.

    Scale into 4 equal parts and place in oiled containers.

    Cover and let proof until doubled in size.

    Lightly sprinkle pan with cornmeal and place dough on pan, forming to full size once on the pan.

    Top and bake in a preheated oven at 450°F for 14 to 20 minutes depending upon your pan, oven, and topping.

Had to add a lot more flour to get it to form a ball. Also please note that it appears that "all dry ingredients" does not include cornmeal as that is used in a different step.
