  • 4 pcseggplant slice circle size
  • Salt
  • Pepper
  • Olive oil
  • Mayonnaise
  • Arugula leaves or rocket leaves 🍃

Steps

  1. 1

    Pre heat the oven 350c mins put the eggplant in baking tray sprinkle with salt and black pepper and olive oil bake around 20-25mins until golden brown,

  2. 2

    Garnish with the mayonnaise sauce and arugula leaves,
