Aloo ka saag is a vegetarian dish from the Indian subcontinent made with potatoes in many different ways and served with heat puri or chappati.

Firstly boil the potatoes and let them cool.
Now peel and mash them. - 3
Now heat oil in a pan and add cumin seeds let them crackle then add ginger garlic paste curry leaves green chilliez and hing.

Stir it well and saute for 2 mins

Now add the tomato puree and ladd all the dry spices and let it cook on low flame till oil seperates.

Now add the mashed potatoes and mix it well and cook for 4_5 mins on medium flame.

Keep stirring to avoid sticking.
Now add water according to the thickness of gravy you prefer. - 8
After the first boil let it boil on low flame for 10_12 mins till oil floats on top.
