Ingredients

10 minutes
3-4 servings
  1. For plain boondi
  2. 1/2 cuprefined flour (maida)
  3. Pinchbaking soda
  4. 1/2 cupwater
  5. For coloured Boondi
  6. 1 cupbesan
  7. Pinchbaking soda
  8. 1/2 cupwater
  9. 1 pinchorange and green food colour
  10. For sugar syrup
  11. 1&1/2 cupsugar
  12. 3/4 cupcup water
  13. Pinchcardmom powder

    In a bowl combine maida, baking soda & water and whisk it well

  2. 2

    Batter should be of dropping consistency. Feel free to add or subtract water in order to adjust consistency,keep it aside

  3. 3

    In another bowl add besan, baking soda and water, whisk it well, preapre this batter also like same maida batter consistency

  4. 4

    Divide besan batter into two equal parts and add orange colour in one batter & green in another

  5. 5

    Find a strainer that has bigger holes than the regular one

  6. 6

    Heat oil in a kadai, check oil before frying, drop a pea size batter in the hot oil

  7. 7

    If it floats back up, means your oil is ready for frying

  8. 8

    Hold the strainer right above the kadai, neither too low nor too high

  9. 9

    Pour batter through the strainer

  10. 10

    And keep spreading in a circular motion

  11. 11

    Till all the batter is strained through.You can see small drops of boondi floating in a hot oil

  12. 12

    Fry until crisp. Do not over fry, once crisp remove from oil

  13. 13

    Drain on a paper towel to remove excess oil

  14. 14

    Repeat the process with rest of the batter

  15. 15

    And fry them the same way

    For sugar syrup

  17. 17

    Prepare sugar syrup by combining sugar and water,cardmom powder bring it to a boil. Boil till it is reduced in quantity and has reached it's one string consistency.

    Take it off the flame.drop the fried boondis into the hot sugar syrup

  19. 19

    Gently toss them around and mix well until boondis are well coated in sugar syrup

  20. 20

    Store in an airtight container
