Put the bananas while unpeeled in a pan put some little water and cover with banana leaves

Cover with a banana leaf to retain moisture

Simmer till tender remove from water

Peel them by cutting them at the front with a knife and peel

Fry.the bananas in oil

Turn side when brown

Remove from heat

For the stew

Clean the gizzard making sure the green inner membrane has been removed

Boil the gizzard for 12 minutes

Remove from water and cut into smaller pieces

Fry the gizzard in oil till brown stirring continously in your non stick pan

Add the onions fry till brown,add tomatoes fry till tender,add carrots

Add royco and a little water cover n simmer for 5 minutes

Serve with plantain or banana garnish with spring onion
