Assorted Meat stew and Leaf Rice

Benin

This rice popularly called IZOKO and Paper rice in Benin was been hawked in a tray with the cooler of stew in the middle and the wraps of rice surrounding the stew.
The stew doesn't need curry or thyme, the penetration of the scents of the leafs into the rice which is wrapped down long before the stew is cooked is the major attraction here. I guess time and civilisation led to the reduction of women and young girls hawking it in the streets of Benin city, Edo state.
Native rice or selected green peppers are not used as in the case of Ofada rice and sauce presented in same native leaf from the Yorubas.
But thankfully you can easily replicate it, in the comfort of your home. Just wrap your rice down long enough after cooking it...

Ingredients

  1. Rice
  2. Assorted meats
  3. 2cookingspoon palm oil
  4. 1cooking spoon vegetable oil
  5. cubesSeasoning
  6. Salt
  7. Fresh tomatoes
  8. Onions sliced
  9. Peppers
  10. Tintomatoes paste
  11. Native leaf for wrapping the rice
  12. Meat stock

Steps

    Wash the fresh tomatoes, peppers, onions and blend them to a smooth paste. Parboil to a thick consistency and set aside.

    Wash your rice thoroughly with clean water and place in a sieve to drain water: put water in a pot enough to dine the rice. When it's cooked set aside.

  3. 3

    Wash the leafs fro the rice with clean water and pat them dry with clean kitchen towel. Wrap the rice in them and keep in a cooler for the scents of the leafs to penetrate until the stew is cooked.

    Wash the cut assorted meats thoroughly with clean water and cook using seasoning cubes, onion and salt.

    Place another clean pot on heat, add the two cooking spoon palm oil to heat up for like 2minutes. Add the vegetable oil to it.

  6. 6

    Sauté sliced onions add tin tomatoes paste, stir for some minutes, before adding your parboiled fresh tomatoes.
    Stir everything together

  7. 7

    Add the assorted meats to the tomatoes mix. Add stock as needed. Cover to cook on heat.

  8. 8

    Add seasoning cubes, check for salt and drop from heat when the stew is fried. You know when the oil gets separated from the tomatoes mix
