Grate or chop up the hard cheeses and place them along with all the other ingredients in the bowl of a food processor fitted with the metal blade. Pulse, until you have a smooth spread.

Transfer to a bowl, cover well with plastic wrap, and refrigerate for at least 4 hours to allow the spread to become firm. Serve with endive or other crisp raw vegetables.
