Mash the boiled potatoes slightly and keep them aside.

Take a woke and heat the oil into it.

When the oil is nice and hot add cumin seeds,hing and kastoori methi to it and stir it.

After that add grated ginger and green chilli to it and stir for 20 to 30 seconds.

After that add tomato puree to it and add turmeric powder, red chilli powder, corriender powder, garam masala, amchur to it and mix it well for 2 to 3 minutes.

When tomatoes are completely cooked and dry add the potatoes and water and mix them well.

Once the water boiled then lower the flame and cook it on sim gas for 10 minutes. Make sure to stir in between.

Add the corriender leaves and aloo sabzi is ready.

For poori, take wheat flour, add carom seeds to it and knead a tight dough with water and keep it aside for 5 minutes by covering it.

Then make small round balls and make small pooris from them with the help of rolling pin.

Fry these pooris in hot oil in a deep wok until dey are golden and fried. Take them out and soak them on a kitchen paper.

Serve them hot with aloo sabzi.
