This is a versatile way of using up the whole potato rather than throwing away the peels.
Steps

Wash the potatoes before peeling. Then line a bowl with kitchen roll.

Peel the potatoes into the bowl as you go. Let the peel dry off for 30 minutes.

Heat the fryer up. Then add in the peels handful at a time. They should take no more than about a minute to crisp up.

Line another bowl with kitchen roll and toss the crispy peels into the bowl.

Once all cooked season with salt and toss well together.
