Nan Khatai (Indian Shortbread Cookies)

First, sift the chickpea flour and all-purpose flour into a large bowl.

Mix in the powdered sugar.

Add the ghee or butter and knead with your hands to form a dough.

If needed, add more butter, but do not add water.

Make small balls from the dough and press them with both hands to shape them into Nan Khatai.

Place them on an ovenproof tray and garnish with melon seeds.

Microwave the Nan Khatai for 15-16 minutes.

The Nan Khatai is now ready.

Serve warm or enjoy once cooled. You can store Nan Khatai in an airtight container.
