Steps

In a bowl sieve the flour, cinnamon, cloves and baking powder. Then add in the salt and place aside

In a separate bowl whisk the oil, eggs, vanilla essence till well blended

Add in the lemon zest and carrots and whisk
- 4
Fold in the flour mixture alternating with the lemon juice to form cake batter
- 5
Pour in a loaf tin and bake at 170°C for 50 minutes or until when a skewer is inserted it comes out clean

Remove it from oven let it cool in the tin before placing it on a rack to completely cool

Frost as desired (tastes better with cream cheese icing). Enjoy
