8 servings

3Red Onions
1chopped Red Bell Pepper
1chopped Yellow Bell Pepper
3 cupsRice
2CrushedTomatoes
5 tbspnOil
1/2 cupPeriperi Sauce
leavesCoriander
2Grated Carrots
Boiling Water

Steps

Saute the onions,add crushed tomatoes,PeriPeri Sauce(check recipe) cook for 3 min.

Add presoaked rice,then boiling water enough to cook rice.

When half way done,add chopped bell peppers,coriander and grated carrots,simmer till done.

Enjoy(I served with french beans)
