Heat a pan with ¼ cup of water along with sugar. Let it simmer until the sugar dissolves completely. Sugar syrup is now ready.

Add semolina into the wheat flour followed by ghee. Mix everything really well. Now add sugar syrup in small portions and knead stiff dough for making mathri.

Dough is now ready. Cover and keep the dough aside for 10-15 minutes to set.now spread the dough. And cut in any design as I have taken this

Heat some ghee in a wok. Ghee should be medium hot for frying the mathris.

Keep flipping their sides and fry the mathris until they turn golden brown in colour from all the sides. Keep the flame on low-medium.

Mathris are now fried aptly. Transfer them on kitchen paper towel. Likewise, fry the rest of the mathris. Wheat flour sweet mathris are now ready.
