Seriously, they're so delicious you might cry, especially when paired with vegetable soup, sambal terasi, and served hot. It's heavenly! 😭 Oh, and if you're too lazy to measure the flour, you can use instant fritter mix and just add a little all-purpose flour. ☺️

Ingredients

  • 2 earssweet corn, kernels removed (canned is fine)
  • 1 tablespoonrice flour
  • 4 tablespoonsall-purpose flour (add more if the batter is too thin)
  • 2green onions, finely chopped
  • 2 stalkscilantro, finely chopped
  • Salt to taste
  • Sugar to taste
  • Bouillon powder to taste
  • as neededWater
  • Spice paste:
  • 8shallots
  • 4 clovesgarlic
  • 7large chili peppers

Steps

  1. 1

    Coarsely mash the corn and place it in a bowl.

  2. 2

    Add the green onions, cilantro, rice flour, all-purpose flour, and spice paste. Mix well. If the batter is too thick, add water and flour as needed.

  3. 3

    Add sugar, salt, and bouillon powder. Taste and adjust seasoning.

  4. 4

    Fry 2 tablespoons of batter at a time in hot oil until crispy (usually 4-5 fritters fit in one pan). Drain well to remove excess oil. 😍
